Every animal on a homestead makes two things: what you wanted, and what you have to deal with. The second pile is bigger. A dozen hens, three goats, and a horse will hand you several hundred pounds of soiled bedding a month, and that stuff is a real fertilizer if you handle it right and a real problem if you do not. The same animals run up a bill on the other side of the ledger too, which is why it pays to know how much water each species drinks per head per day before you add stock.

Composting manure is the step that turns one into the other. Most garden blogs treat it as a chore. It is actually a food-safety process with a temperature spec, a time spec, and a couple of federal waiting periods behind it. Get those right and you get free fertilizer. Get them wrong and you have spread E. coli and Salmonella across the bed where your lettuce is going.

This is the manure-specific version of the process. If you want the kitchen scraps and yard waste side, the five home composting methods and how to pick one is a different pile with different math. Here we are dealing with bedding, droppings, and the pathogens that come with them.

Why does manure need to be composted before it goes in a vegetable garden?

Because raw manure carries human pathogens, and heat is what removes them. The University of Minnesota Extension lists what routinely shows up in livestock manure: Campylobacter, E. coli, Leptospira, Salmonella, and Yersinia among the bacteria, Cryptosporidium and Giardia among the protozoa, plus rotavirus. Their recommendation is blunt: two cycles of temperatures of at least 131 degrees F to kill pathogens.

That is the part most guides skip. They tell you to "let it age." Aging is not the same thing. A cold pile sitting behind the barn for a year gets darker and smaller, and some pathogens die off, but it never hits the temperature that reliably finishes the job, and the outer 6 inches of any pile stay cool no matter how long you wait. Time alone is a weaker tool than heat.

There is a second reason, and it is the one that bites gardeners who are not worried about safety. Raw manure is chemically aggressive. It is high in ammonium nitrogen and salts, both of which burn roots and seedlings. Colorado State University Extension puts a hard ceiling on salt: manure or compost above 10 dS/m is questionable, and you should not use it at all on soil already sitting above 3 dS/m. Composting drives salts and ammonium down while the pile cooks.

Which manures are hot and which are cold?

Hot manures are high in available nitrogen and will burn plants if applied fresh. Cold manures are milder and lower in immediately available nitrogen. Here is the practical ranking on a small place:

  • Poultry (chicken, duck, turkey): the hottest. Penn State Extension flatly calls chicken manure "hot" because of its elevated nitrogen concentration, and says it will burn tender seedlings. It always gets composted. The upside is that it is the most concentrated of the bunch: UGA Extension's rate table calls for roughly 50 pounds of composted poultry manure per 1,000 square feet versus 150 pounds of cow or 200 pounds of horse for the same effect.

  • Rabbit: cold, and the easiest. Rabbit pellets are dry, low odor, and mild enough that many gardeners side dress with them directly. They still carry the same waiting-period rules if you use them raw, but they will not scorch a plant the way fresh chicken litter will. Rabbit droppings also come mixed with very little bedding, so they compost fast.

  • Horse: middling nitrogen, maximum weed seed. Horses do not digest seed thoroughly, so horse manure is the pile most likely to reseed your garden with whatever was in the hay. This is where hot composting earns its keep. Colorado State notes you need the pile above 145 degrees F to kill weed seeds and 155 degrees F for pathogens.

  • Ruminants (cattle, sheep, goats): cold, bulky, slow. Cattle and small ruminant manure is lower in available nitrogen per pound and comes with a lot of fiber. It is forgiving to work with and it is excellent for building soil structure, but it is a soil amendment more than a fertilizer, and cattle are a well documented reservoir for shiga toxin producing E. coli. Compost it anyway.

UGA Extension keeps the safe list short and clear: poultry, cattle, horse, and small ruminant manure are fine for gardens, while waste from dogs, cats, pigs, or other pets should never be used.

What is the right carbon to nitrogen ratio, and why is bedding the carbon?

The target is 25:1 to 40:1 carbon to nitrogen at the start, and your bedding is almost always the carbon side of that equation. Cornell's composting program gives the ideal as around 30:1, dropping to 10:1 or 15:1 in finished compost as carbon burns off as carbon dioxide.

Here is why that matters more for manure than for anything else you compost. Manure by itself runs roughly 5:1 to 25:1 carbon to nitrogen. That is nitrogen-rich and carbon-poor. Cornell's warning is that at low ratios "nitrogen will be supplied in excess and will be lost as ammonia gas." A pure manure pile does not compost so much as stink and leach. The nitrogen you were trying to capture walks off into the air.

Bedding fixes it. Cornell's numbers for the common ones:

  • Straw: 40:1 to 100:1. The all-around best partner. Breaks down at a reasonable pace and holds structure so air can move.

  • Autumn leaves: 30:1 to 80:1. Free, and worth stockpiling in fall specifically for this.

  • Sawdust and wood chips: 100:1 to 500:1. Enormous carbon load. A deep pine-shaving coop cleanout can easily overshoot 40:1 all by itself, which stalls the pile cold. Cut it with fresh manure or grass clippings.

UGA's backyard poultry litter guide simplifies this into a ratio you can eyeball: roughly 3 parts brown material to 1 part green by volume. That gets you close enough to start, and the pile itself will tell you if you missed. Ammonia smell means too much nitrogen, so add bedding. No heat at all after 3 or 4 days means too much carbon, so add fresh manure. The part most guides skip: if you spread a high-bedding manure raw, the excess carbon does not just sit there. UNH Extension notes that above 30:1, most of the nitrogen is immobilized and unavailable to plants for an extended period. Soil microbes pull nitrogen out of your soil to chew through the wood shavings. Your fertilizer temporarily becomes a fertilizer thief. Composting first burns off that surplus carbon so it does not happen in your beds.

Turning is not optional. It is what moves the cool outer material into the hot core.

What temperature kills pathogens in a manure compost pile, and for how long?

131 to 170 degrees F, held for 3 days in a static aerated pile or in-vessel system, or 15 days in a turned windrow with a minimum of 5 turnings. That is not a rule of thumb. It is the actual federal definition of composted material in the organic regulations, 7 CFR 205.203(c)(2), and it is the cleanest target a home composter can aim at.

Broken down:

  • Start between 25:1 and 40:1 C:N. The regulation names this as part of the definition, not as advice.

  • Get the pile to 131 degrees F minimum, 170 degrees F maximum. Above about 160 degrees F the beneficial microbes start dying off and the pile stalls itself. If it climbs that high, turn it to vent heat.

  • In-vessel or static aerated pile: hold 3 days. These systems force air through the whole mass, so the temperature is uniform.

  • Windrow or turned pile: hold 15 days and turn at least 5 times. The extra time and the turnings exist because a hand-turned pile is not uniform. Every turn moves cool outer material into the hot core. Five turns is the number that gets essentially all of the material through the kill zone.

You need two things to actually do this. A pile big enough to insulate itself, and a thermometer long enough to read the core. UGA's backyard guide specifies bins 4 to 5 feet on every side, which is about the minimum mass that will self-heat in cool weather. Buy a 20 inch compost thermometer. Guessing by hand is how people convince themselves a 110 degree pile is "hot."

Moisture is the quiet variable. Target about 50 percent by weight, which UGA describes as uniformly moist throughout the pile but not dripping wet. Squeeze a handful. It should feel like a wrung-out sponge and hold together without water running out. Too dry and the pile will not heat. Too wet and it goes anaerobic, drops temperature, and starts to smell like a septic tank.

Honest limit: a hand-turned backyard pile is not a validated process. You are approximating a commercial standard with a pitchfork. Hit the temperature, hit the turns, and then still respect the waiting periods below. Belt and suspenders.

How long do you have to wait after applying raw manure to a garden?

120 days before harvest if the edible part touches soil, and 90 days if it does not. This is the National Organic Program rule in 7 CFR 205.203(c)(1), and the FDA has explicitly pointed at it. When FDA wrote the Produce Safety Rule under FSMA, it declined to set its own number and instead said it would be prudent for farmers to comply with the USDA National Organic Program standards of 120 days and 90 days while the agency finishes its risk assessment.

Sort your garden by that line:

  • 120 day crops (edible part contacts soil): lettuce, spinach, carrots, radishes, beets, potatoes, onions, strawberries, melons, winter squash lying on the ground, and any low-hanging bush bean.

  • 90 day crops (edible part does not contact soil): trellised tomatoes, staked peppers, sweet corn, pole beans, eggplant, and tree fruit.

On a practical calendar this means raw manure is a fall or very early spring job. Colorado State recommends applying fresh manure in fall and waiting three to four months from application to harvest, and never applying fresh manure to an actively growing crop. Some extension services go further for tilled-in manure: UGA suggests 90 days minimum for topdressing but 180 days if you are turning it 6 to 8 inches into the soil, on the reasoning that buried pathogens are shielded from sunlight and drying.

Properly composted manure does not carry a waiting period at all under the organic rule. That is the whole payoff for doing the temperature work. UGA still suggests applying finished compost about a month before planting food crops, which is a sensible margin rather than a requirement.

Why should dog and cat waste never go in the garden pile?

Because carnivore and omnivore feces carry parasites that infect people, and some of them are functionally permanent in soil. The clearest example is Toxocara, the roundworm of dogs and cats. According to the CDC, unembryonated eggs are shed in feces and become infective after 1 to 4 weeks in the environment, and the eggs are extremely hardy and can persist in the environment for years. Preschool children are the most vulnerable group, because they are the ones with their hands in the dirt.

Cat feces adds Toxoplasma gondii to the list, which is the reason pregnant women are told to stay away from litter boxes. Pig manure is excluded for a related reason: as an omnivore, a pig shares more parasites with humans than a cow does. Penn State, UNH, and UGA Extension all draw the same line and exclude cat, dog, pig, and human waste from garden compost.

Could a genuinely hot, well-run pile handle it? In principle. In practice, no home pile is uniform enough for that bet, and there is no upside worth it. Dog and cat waste goes in the trash or into a dedicated pet-waste digester that is nowhere near a food bed.

How can you tell finished compost from unfinished compost?

Finished compost is cool, dark, crumbly, and smells like soil rather than manure. Unfinished compost still reheats when you disturb it. Run these four checks before it goes anywhere near a food bed:

  • The temperature test. Turn the pile and check it 24 hours later. If it climbs back above about 110 degrees F, it is still actively decomposing. Finished compost stays within a few degrees of ambient.

  • The smell test. Earthy and sweet means done. Ammonia means excess nitrogen still working. Sour or sulfurous means anaerobic pockets, which means turn it and add bulk.

  • The look test. You should not be able to identify the original ingredients. Recognizable straw stems or intact droppings mean it is not there yet. Volume is a hint too: Colorado State notes finished compost is typically reduced four to six-fold from the starting volume.

  • The seedling test. This one is worth the trouble. Fill two pots, one with your compost and one with plain potting soil, and plant a few fast radish or lettuce seeds in each. If germination in the compost pot is clearly worse, the compost is immature and still tying up nitrogen or holding phytotoxic compounds. Wait.

Curing is the step people skip. After the hot phase ends, the pile needs another 30 to 60 days of quiet, cooler decomposition. Colorado State puts full decomposition at six to ten weeks or more if you turn weekly, and UGA's three-bin system builds in "several more weeks" in the final bin for maturation. Curing is where the harsh organic acids finish breaking down. Skipping it is the most common reason homemade compost stunts transplants.

How much finished manure compost should you actually put down?

About 2 to 3 inches of composted manure per season, or roughly 1 inch per year of raw or partially aged material. UGA's rate is 2 to 3 inches of composted manure, and Colorado State's limit for manure specifically is 1 inch per year cultivated 6 to 8 inches deep, with the rate reduced if you are working it in shallower.

Two numbers worth knowing about nitrogen release. Colorado State reports that 30 to 50 percent of the organic nitrogen in raw manure becomes available in the first year, then roughly half of the remainder in each following year. Composted dairy manure releases far less up front, only 5 to 20 percent in year one. That is not a defect. It is slow-release fertility, and it means a bed that has had manure compost for several years is running on a nitrogen bank you built earlier.

Do not eyeball it forever. Most state extension services run soil tests for a modest fee, and phosphorus buildup from repeated manure applications is a real and common problem in long-established garden beds. A test every 3 years keeps you honest.

When should you get professional help?

Call your county extension office before you start if you are composting manure from a herd that has had a diagnosed disease outbreak, if you are working with more than a few cubic yards, or if your property is near a well, a stream, or a wetland. Manure storage and runoff are regulated in many states, and setback distances vary. Extension is free and they know your local rules.

Call a veterinarian, not the internet, if animals in your herd or flock have persistent diarrhea, sudden weight loss, or unexplained deaths. Sick animals shed far more pathogen into bedding than healthy ones do, and that changes how the manure should be handled. I write about preparedness and I am not a veterinarian.

Basic hygiene covers most of the risk: gloves while handling, wash hands with soap and running water afterward, keep manure tools separate from kitchen produce baskets, and wash garden produce well regardless of what you fertilized with.

Can you put fresh chicken manure directly on a garden?

No, not on anything you plan to harvest soon. Fresh chicken manure is the hottest of the common manures and will burn seedlings and roots outright because of its high ammonium nitrogen. It also carries the same pathogen load as any raw manure. Either compost it to 131 degrees F or apply it in fall and wait 120 days before harvesting soil-contact crops.

Can I compost manure in winter?
