Fall Garden Planting: How to Use Your First Frost Date to Pick What Still Has Time
Radish still makes it. Beans stopped being possible a month ago. Here is the arithmetic that tells you which is which.

Fall garden planting is arithmetic, not a feeling. Count backward from your first frost date: days to maturity, plus about 14 days for growth that slows as daylight shortens, plus a harvest window, plus a buffer for anything frost tender.
"Average first frost" is a median, not a promise. NOAA builds it from the 1991 to 2020 climate normals, which means roughly half of years freeze before that date.
In late August and early September most of the country can still direct seed radish, arugula, spinach, leaf lettuce, mustard, turnip greens, bok choy and cilantro. Corn, beans, squash and tomatoes are done for the year.
The part most guides skip: late summer sowings fail on soil temperature, not air temperature. Lettuce and spinach stall out when the soil sits above about 70°F.
Row cover buys a few degrees, up to about 10°F on heavier weights. A cold frame can add 2 to 6 weeks on each end. When it is genuinely too late for food, sow a cover crop and call it a win.
Late August is where fall garden planting stops being a nice idea and turns into a math problem. You either have enough frost-free days left for a crop to finish, or you don't, and the only honest way to find out is to count backward from your first frost date. Most of the disappointment I see in fall gardens comes from skipping that count.
Here is the arithmetic, the crops that still fit it this week, and the one variable that quietly wrecks late summer sowings even when the calendar says you had plenty of time.
How do I find my average first frost date?
Look up the median first fall freeze for your location in NOAA's climate normals, then treat it as a coin flip rather than a deadline. NOAA's National Centers for Environmental Information builds these dates from the 1991 to 2020 U.S. Climate Normals, and defines a freeze as surface air temperature at or below 32°F over a widespread area.
The word "average" hides the important part. NOAA's median date means a freeze happened on or before that date in 5 out of the 10 years on record. That is a 50 percent chance, not a guarantee. Plan a tender crop to finish exactly on your average first frost date and you are betting on a coin flip.
NOAA also publishes earliest 10 percent and latest 10 percent dates for the same station. Those are the useful bookends. If you want a crop that almost certainly finishes, work back from the earliest 10 percent date. If you are willing to gamble on a late fall, use the median and keep row cover on hand.
Two more things the map will not tell you. First, your yard is not the airport. A low spot where cold air pools can frost a week or two ahead of the official station, and a bed against a south-facing wall can run later. Second, historical normals do not replace the forecast. NOAA's National Weather Service issues frost and freeze watches and warnings for your area, and that is what you actually act on in October.
How do you calculate a fall garden planting date?
Start at your first frost date and subtract four things: days to maturity, a fall factor of about 14 days, a harvest window, and a frost-tender buffer if the crop cannot take a freeze. Every number after the first one is there because fall is not spring in reverse.
Here are the four subtractions, in order.
Days to maturity. Off the seed packet. For direct-seeded crops that counts from sowing. For transplants, the number usually counts from transplant date, so add the 4 to 6 weeks of nursery time if you are starting your own.
The fall factor, about 14 days. University of Maryland Extension calls this the short day factor and puts it at 14 days. It compensates for decreasing light and lower temperatures that slow growth. A 50-day crop sown in September behaves like a 64-day crop. Maryland notes the adjustment matters most for crops that make heads or pods, and less for roots and loose leaves.
A harvest window, about 14 days. You are not picking the whole bed in one afternoon. Iowa State University Extension advises allowing 2 or more weeks before the typical frost date for harvesting. Skip this and your crop matures the same week the freeze arrives.
A frost-tender buffer, about 14 days. Only for crops that die at 32°F. Iowa State puts it plainly: tender, quick-maturing crops need additional time because they will not tolerate even a light frost.
Worked example, so you can copy it. Say your median first frost is October 15.
Radish, 28 days to maturity, tolerates light frost. October 15 minus 28 days is September 17. Minus the 14-day fall factor is September 3. Minus a 14-day harvest window is August 20. Sown the last week of August you are a few days past ideal, but radish shrugs off a light freeze, so you simply harvest into late October. This one still works.
Bush beans, 55 days to maturity, frost tender. October 15 minus a 14-day tender buffer is October 1. Minus 55 days is August 7. Minus the 14-day fall factor is July 24. That date is a month gone. Beans are out.
Leaf lettuce, 45 days, tolerates light frost. October 15 minus 45 is August 31. Minus 14 is August 17. Minus a 14-day harvest window is August 3. You are late for full-size heads, but you are right on time for baby leaf, which you can start cutting at 25 to 30 days.
That last line is the escape hatch most people miss. Days to maturity assumes a full-size harvest. Greens, radishes and turnips are all edible well before the packet number, so a leafy crop that is two weeks "late" is usually just a smaller crop, not a failed one.
What can you still plant in a fall garden in late August?
Fast, cold-tolerant crops you eat the leaves or the roots of, plus alliums for next summer. In most of the country the late August and early September list looks like this:
Radish, 25 to 30 days. The fastest real food in the garden.
Arugula, roughly 40 days, and edible as baby leaf at 3 weeks.
Spinach, 40 to 45 days, and one of the best overwintering crops under cover.
Leaf lettuce, 45 to 50 days for full size, far less for cutting.
Mustard greens and turnips, 40 to 50 days. Turnips give you greens early and roots later from the same sowing.
Kale, 50 to 55 days to full size, but pickable as baby leaf much sooner.
Bok choy, mizuna and tatsoi, 40 to 50 days. University of Maryland Extension lists all of these among the hardy crops that withstand a hard frost.
Cilantro, about 50 days, and it actually prefers the cooling weather that makes it bolt in June.
Garlic and shallots, planted in October for a harvest next summer. University of Minnesota Extension recommends planting cloves one or two weeks after the first killing frost, with the base of the clove 2 to 3 inches below the surface, then 3 to 4 inches of leaf or straw mulch. Maryland lists garlic, shallot and multiplier onion as October plantings.
The crops that are out of time in late August, in nearly every zone, are the long-season and frost-tender ones: sweet corn, beans, cucumbers, summer squash, winter squash, pumpkins, melons, okra, eggplant, peppers and tomatoes. So are the long brassicas. Broccoli, cauliflower, cabbage and Brussels sprouts needed to go in as transplants in June or July, and Iowa State puts their maturity range at 45 to 100 days on top of nursery time. Buying a flat of broccoli transplants in September is money you will not get back. Those finishing summer crops are worth one last pass before you pull them, though, because late August is also the right moment to save seed from the varieties you want again next year.
Before you seed, get the bed ready. A fall sowing goes into soil that has already carried a summer crop, so it is worth working in finished compost first. What is the difference between frost tolerant and frost tender?
Frost tolerant crops survive a freeze and keep producing. Frost tender crops turn to mush the first night the thermometer touches 32°F. South Dakota State University Extension sorts them by the actual temperature each group survives, which is more useful than a two-bucket list:
No frost tolerance. Beans, sweet corn, potatoes, peppers, eggplant, cucumbers, summer squash, melons, tomatoes. Harvest or protect before the first freeze.
Light freeze, 28°F to 32°F. Beets, carrots, cauliflower, lettuce, onions, garlic, chives, parsley, peas, radish, spinach and Swiss chard.
Moderate freeze, 24°F to 28°F. Broccoli, cabbage, kale, kohlrabi, turnip and Chinese cabbage. These are the ones that carry a fall garden into November in a lot of the country.
Some crops genuinely improve. SDSU notes that root crops develop more sugars below 40°F and that Brussels sprouts are often best after a light freeze. University of Minnesota Extension says much the same about fall kale and collards: the cooler the weather, the better the flavor, right up until freezing temperatures stop growth. So carrots, parsnips, turnips, kale, collards and Brussels sprouts are all crops worth deliberately leaving out for the first frost instead of rushing to beat it.
Why won't seeds germinate in late summer soil?
Because soil temperature, not air temperature, is what the seed responds to, and in late August your soil is running hotter than the air feels. This is the part most fall planting guides skip entirely, and it is the single most common reason a late August sowing produces a bare bed.
Oregon State University Extension publishes the soil temperature ranges for vegetable seed germination, and the numbers explain a lot:
Lettuce: optimum 75°F, maximum 95°F. It sprouts in about 2 days at 77°F but takes 15 days at 41°F.
Spinach: optimum 70°F, maximum 85°F. That maximum is low, and a sunny bare bed in August clears it easily.
Radish: optimum 85°F, maximum 95°F. Radish does not care about your heat problem, which is part of why it belongs on the late list.
Carrot: optimum 80°F, maximum 95°F, and 6 days to emerge at optimum versus 51 days in cold soil.
University of Maryland Extension puts the practical threshold lower still: lettuce and spinach seeds are difficult to germinate when soil temperature is above 70°F. A bare, dark, south-facing bed on an 85°F afternoon can easily read 90°F or more at 1 inch down. The air says "nice fall weather." The seed says no.
Buy a soil thermometer. They cost less than a packet of seed. Push it 1 to 2 inches down where you intend to sow and read it around 9 a.m. and again mid-afternoon. That number, not the forecast high, is what tells you whether to sow today or wait a week.

How do you get germination in hot soil?
Cool the seedbed, keep it wet, and give the seed a head start indoors. Extension services recommend a stack of small tricks that add up, and you can use all of them at once:
Shade the row. Oklahoma State University Extension recommends covering seeded rows with screen wire strips, shade cloth, or boards to moderate both soil temperature and soil moisture. A scrap 1x6 laid flat over the row works fine. Check daily and pull it the moment you see green.
Mulch lightly after sowing. Iowa State notes that a light mulch cools the soil and aids germination. Light is the operative word. A thin scatter of straw, not a blanket.
Water more often, not more deeply. A germinating seed needs the top inch continuously damp. In late August that can mean a light watering twice a day, and watering also cools the surface directly. Open the furrow deeper, but do not bury the seed deeper. This distinction matters. Oklahoma State advises opening the row somewhat deeper than in spring so you reach cooler, moister soil, while still planting the seed no deeper than three times the diameter of the seed. You are lowering the seedbed, not the seed. Then fill in and mulch.
Pre-sprout indoors. Iowa State recommends sprouting seeds on a moist paper towel indoors, then planting them out. You skip the hottest, riskiest part of the process entirely. Handle sprouted seed gently and plant it the same day.
Soak overnight. Oklahoma State suggests soaking seed overnight before planting to hasten emergence, with the exception of beans and peas, which crack and rot when soaked.
Sow in the evening. Not from an extension bulletin, just practical. An evening sowing gets a full cool night of moisture before it faces its first afternoon.
One more: if you have transplants rather than seed, the germination problem disappears. Iowa State recommends starting longer-maturing crops indoors 6 to 8 weeks ahead for fall planting. That is too late for this season's broccoli, but it is exactly the note to write on next year's July calendar.

How much does row cover, a low tunnel or a cold frame actually buy you?
A few degrees from the light stuff, up to about 10°F from the heavy stuff, and 2 to 6 weeks of season from a cold frame. Those are the honest numbers, and they are smaller than most marketing suggests.
Colorado State University Extension's frost protection guide gives measured figures:
Floating row cover: up to 10°F of frost protection depending on the grade of material. Lighter, thinner covers give less. NC State Extension's season extension appendix puts typical row covers and low tunnels at 4°F to 5°F, which is a fair everyday expectation.
Cold frame, plastic cover alone: 3°F to over 6°F.
Cold frame plus a string of C-7 Christmas lights (one 25-light string per 4 foot by 5 foot frame): 6°F to over 18°F.
Cold frame plus lights plus a space blanket: 18°F to over 30°F. In Fort Collins trials, plastic plus a space blanket kept the inside above freezing at 0°F outside.
Water-filled plant protectors: protection typically down to the mid-teens.
Colorado State puts the overall gain from a cold frame at two to six weeks or more on both ends of the growing season for cool-season crops. University of Maryland adds that low tunnels built from PVC arches and 6-mil plastic give thermal protection, and that water-filled containers inside the tunnel store daytime heat and release it overnight.
Two practical notes. Row cover does double duty in fall: it excludes cabbage worms and flea beetles at the same time it holds heat, which matters because brassica pests are still active into September. When is fall garden planting the wrong call, and what do you plant instead?
When the math puts your planting date in the past by more than about two weeks, plant a cover crop instead of forcing a food crop you will not harvest. This is not a consolation prize. A cover crop is the single highest-return thing you can do with a bed you are not eating out of.
University of Maryland Extension's home garden cover crop guidance gives real numbers:
Sowing window: late summer into fall, roughly August 15 to October 1.
Seeding rate: 3 to 4 ounces per 100 square feet for grains, 1 to 2 ounces per 100 square feet for legumes.
Overwintering species: winter rye (very hardy, and its root system breaks up dense clay), winter wheat, hairy vetch (hardy but slow to establish) and crimson clover.
Winter-killed species: spring oats and forage radish. These die in the cold and leave a soft mulch you can plant straight into in spring, which makes them the easy choice if you would rather not turn under a living crop in April.
Not winter hardy: buckwheat, which grows fast and reseeds itself but will not carry a bed through winter.
Cover crops cut erosion over the wettest months of the year, feed soil microbes, add organic matter when turned under, and in the case of legumes return a meaningful amount of nitrogen for next year's crop. If your only two options in early October are a bed of bare soil or a bed of winter rye, rye wins every time.
What the frost date math cannot tell you
Frost date arithmetic is a planning tool, not a forecast, and it has clear limits worth naming.
It is a probability, not a date. The median freeze date means half of years come in earlier. If your whole fall garden depends on making that date, you have built a plan with a 50 percent failure rate.
It is a regional number applied to a specific yard. Cold air pools in low spots. Your bottom garden may freeze days before your top one.
Days to maturity are estimates from a seed company's trial conditions, not yours. Treat them as approximate and lean conservative in fall, when there is no time to recover from being wrong.
The first frost is not the end. In most of the country a light freeze is followed by two or three more mild weeks. A frost-tolerant crop under cover often produces well past the "end" of the season.
Nothing here replaces the forecast. Watch NOAA's National Weather Service frost and freeze watches and warnings for your area and be ready to throw a cover on with 12 hours notice.
And a note on scale. If this is your first fall garden, plant one bed, not five. Fall growing has a different rhythm from spring, the watering demands in September are odd, and it is much easier to learn that on 30 square feet than on 300.

Do I have to harvest everything before the first frost?
