One number that trips people up: the USDA's Food Safety and Inspection Service lists a general shelf life of about 2 years for rice and dried pasta on its standard shelf stable food chart. That's the number for a bag of rice sitting in your kitchen cabinet, opened and closed regularly, exposed to normal air and humidity. It is not the number for grain that's been dried to proper moisture, sealed in mylar, and had the oxygen pulled out.
