Because confidence, not ignorance, is what gets people hurt. A person who has no idea what a plant is will leave it alone. A person who has matched three features out of five and filled in the rest from memory will eat it.

The families that cause the most trouble are the ones where dozens of species share the same overall silhouette. The carrot family is the worst offender: a cluster of tiny white flowers arranged in a flat umbrella sits on top of edible plants, mildly toxic plants, and two of the deadliest plants on the continent. How do you tell poison hemlock from wild carrot?

Look at the stem. Wild carrot, also called Queen Anne's lace, has stems densely covered with hairs. Poison hemlock stems are hairless and carry red or purple blotches.

Penn State Extension puts the contrast plainly: poison hemlock's "red or purplish spots along the stem" are a key identifier, and during flowering "the purple spots along the stem can grow together to make the stem appear purple in color," while "stems of wild carrot are densely covered with hairs."

Size is the second tell, and it is visible from a distance. Penn State notes that flowering poison hemlock reaches between three and six feet in height, while wild carrot "rarely reaches more than two feet." University of Nevada Extension adds that poison hemlock stems are "smooth, erect, and solid, with distinct ridges" and that all parts of the plant are poisonous, with the lower stems and roots the most deadly.

Here is the part most guides skip, and it matters. Sources disagree about whether poison hemlock smells like carrot. Washington State University Extension reports no carrot scent when crushed, while University of Nevada Extension describes a "fleshy white taproot" with a carrot-like smell. When authoritative sources conflict on a feature, that feature is not diagnostic. Do not use smell to clear a plant in the carrot family. Use the stem.

What makes water hemlock different, and why does it matter more?

Water hemlock is faster and more lethal than poison hemlock, and it grows exactly where you would go looking for water. The USDA Forest Service calls Cicuta maculata "the most poisonous plant in the North Temperate Zone," and University of Nevada Extension calls western water hemlock "the most violently toxic plant in North America."

The toxin is cicutoxin, and the timeline is short. The Forest Service reports that symptoms develop "within 60 minutes of ingestion, frequently leading to death," with delirium, nausea, abdominal pain, convulsions, and seizures.

Three features separate it, and all three are worth knowing:

  • Habitat. The Forest Service notes it "occurs primarily on wet soils associated with ditches, stream banks, pond margins, and marshes." A white flowered umbel standing in wet ground deserves your full attention.

  • The chambered root. The lower stem and upper root contain "numerous internal partitions or air spaces that can be revealed if sliced lengthwise." University of Nevada Extension describes those chambers releasing a "highly poisonous brown or straw-colored liquid" when broken. Do not go digging up roots to check this. Know it so you understand why disturbed roots near water are hazardous.

  • Leaf veins. This is the classic tell and the most useful one. University of Nevada Extension notes that water hemlock leaf veins "terminate at the bottom of leaf serrations, and not at the tips," while poison hemlock leaves have "veins that run to the tips of the lobes." Vein to the notch, not to the point.

The honest limit on all three: they are features that help a trained eye confirm a plant it already suspects. They are not a green light for a beginner to eat anything in the carrot family. My own standard, and I think it is the right one for most people, is simply to leave the whole carrot family alone. The edible members are not worth what the toxic members cost.

How do you tell wild garlic and ramps from lily of the valley and death camas?

Smell the plant, and smell it before you touch anything else. Illinois Extension describes ramps directly: "Their leaves, if rolled in the hand, smell like onions." Every true wild allium, whether ramp, wild garlic, or wild onion, smells unmistakably of onion or garlic when crushed.

Death camas does not. Montana State University Extension is explicit: "wild onion has a strong onion odor, whereas death camas has no odor to any part of the plant," and notes "there have been a few cases of persons mistakenly consuming death camas, thinking they were eating wild onion." The plant carries alkaloids throughout, with seeds the most toxic, followed by bulbs, then leaves and stems. Extension describes grass-like, V-shaped leaves, a single stalk topped with a cone-shaped head of greenish-white to cream flowers, and a bulb sitting two to eight inches underground.

Lily of the valley is the other common confusion, especially with young ramps in spring, since both produce broad basal leaves from an underground base. NC State Extension describes lily of the valley leaves as "basal simple paired elliptic or narrow ovate leaves 5 to 10 inches long" with parallel veins, and lists all parts as poisonous, with cardiac glycosides and saponins as the toxic principle and symptoms including "irregular and slow pulse, abdominal pain and diarrhea, low blood pressure, disorientation, coma, seizures."

Now the part most guides skip, and it is the reason smart people still get this pair wrong. The smell test only works in one direction, and only once. If a plant smells of onion, it is an allium. But the moment you have crushed one allium leaf, your fingers smell of onion, and every plant you handle afterward will seem to smell of onion too. Smell each plant before you pick it, with clean hands, or you will simply be smelling your own hands and calling it identification.

How do you tell elderberry from pokeweed?

Look at the stem and the shape of the berry cluster. Elderberry is a woody shrub with flat-topped flower clusters. Pokeweed is a fleshy plant with berries hanging in a long, narrow, grape-like spike.

Illinois Extension describes American elderberry as a native shrub reaching five to ten feet with pinnately compound foliage of "5 to 11 oppositely arranged leaflets," and flower clusters four to six inches across "of small white flowers that form flat, compound umbels" that mature into hanging clusters of blue-black berries.

Penn State Extension describes pokeweed differently on every one of those counts: "stems of mature plants are reddish" and the plant is not woody "despite the plant's shrub-like appearance," with fruit borne in racemes that are "erect or droop" and berries that shift from green "to purple to almost black" as they mature. Penn State warns that the new leaves, roots, and berries "should not be eaten because they are toxic."

Three practical separators worth memorizing: elderberry stems are woody and persist through winter, pokeweed dies back to the ground each year and its stem crushes easily. Elderberry leaves are compound with multiple leaflets on a shared stalk, pokeweed leaves are simple. Elderberry berries sit in a flat or slightly domed cluster, pokeweed berries hang in an elongated spike.

Why must elderberries always be cooked?

Because raw elderberry contains cyanogenic glycosides that release cyanide during digestion. Oregon State University Extension states it without hedging: "Because raw elderberry products may contain elevated levels of toxic compounds, you should always cook elderberries before eating them." OSU adds that cooking "eliminates this risk and makes them safe for eating."

Species matters too. OSU lists blue elderberry (Sambucus nigra ssp. cerulea), American elderberry (ssp. canadensis), and European elderberry (ssp. nigra) as suitable for food when properly prepared, and says of red elderberry (Sambucus racemosa): "Avoid using these to create food products." Blue and black fruited elderberries are the ones people cook. Red fruited elderberry is the one to leave alone.

The other half of the rule is what you leave out of the pot. OSU notes that "stems and leaves contain higher levels of toxins, so it is important to remove these before processing." Destemming is not a cosmetic step. Elderberry is also one of the most heavily promoted ingredients in home remedy advice, so it is worth reading which natural remedies hold up to research and which are folklore before you cook a syrup on somebody else's say so.

This is not theoretical. CDC's Morbidity and Mortality Weekly Report documented an incident in Monterey County, California on August 26, 1983, in which juice was pressed from crushed elderberries together with leaves and branches. "Within 15 minutes after drinking refreshments, 11 persons began to have nausea and vomiting." Eight were severely ill and hospitalized, and the person who had drunk five glasses was the sickest. CDC noted that "the fresh leaves, flowers, bark, young buds, and roots contain a bitter alkaloid and also a glucoside that, under certain conditions, can produce hydrocyanic acid." Everyone recovered, which is the good news. Fifteen minutes is the part to remember.

A few things that make the call more useful. Keep a piece of the plant, ideally with stem, leaves, and any flowers or fruit, in a bag. Photograph it where it grew, including the surrounding habitat. Note the time it was eaten and roughly how much. Do not induce vomiting unless Poison Control tells you to. And do not wait to see whether it gets worse, because with the hemlocks the window between "seems fine" and "medical emergency" can be under an hour.
